Menu Plan Monday February 13th-19th

And we are back in gear here!  We were lucky to be able to spend a week home visiting family for my grandfathers 90th birthday!!  It was so great to see family and friends that we have not seen in years!  Then we spent last week trying to get back into the swing of things around here at the house again!  This week we are back in full swing and holy goodness it is already Valentine’s Day week!  How did that happen??  Part of our Valentine’s tradition for me and the hubby is that instead of a gift I always bake something for him.  With just getting out of Christmas season and his birthday being at the end of February gifts for Valentines Day just never made sense!  I have made some fun things over the years for him but this year with a 5 yr old and 20 month old to help out (not to mention being 35 weeks pregnant with #3!) we are keeping it simple!  Check out some of the new recipes that I am trying out this week!!

Dinners:

Stuffed Shells with garlic bread

French Cranberry Chicken (New Recipe!) with wild rice

Fried Ham Slices with Cheesy Hashbrown Bake (New Recipe!) and Succotash (New Recipe!)

Roast Beef with Potatoes and Carrots

Hawaiian Pizza

Roast Sticky Chicken with Creamed Brussels Sprouts and baked potatoes

Chicken and Dumplings (our 5 year old’s favorite!)

Easy Valentine’s Day Fudge (New Recipe!)

I am also going to try out those new Fundamiddle cupcake mixes adding pink frosting on the top :-)

Menu Plan Monday July 4th-10th

Happy Fourth of July everyone!! Hope everyone is having a great holiday weekend with friends and families.  We got to enjoy the local parade and fireworks with the kids yesterday and we even got to take our 4 yr old to see Cars 2 in 3D on the super cheap!  Using the Living Social deal (no longer available) from a few weeks ago (that I got for free because 3 of my friends also bought) got mine and the hubby’s ticket, we paid for the child’s ticket ($12.50).  Then used a free popcorn text coupon which we upgraded to a medium for $1 and purchased a soda for $5.  $18.50 for our family to see a 3D movie, not so bad!!  And the movie was great too!!  Our son LOVED it!!  :-)

So, onto this weeks menu….

Dinners:

Roast Beef with Potatoes and Carrots and Cherry Dump Cake

Meatloaf Muffins with Buttermilk Mashed Potatoes

Beef with Broccoli (using leftover grilled London Broil from last week)

Baked Omelet

Chicken and Rice Casserole with Broccoli Parmesean

Taco Crescent Bake

Dinner at Grandma & Grandpa’s house before heading back to our home after the long holiday weekend :-(

Menu Plan Monday June 27th-July 3rd

The first official Monday of Summer!!  Love summer recipes!  Grilling and spending time outdoors!  There is also a lot of schedule busters in the summer, so having a menu plan is critical for this busy and crazy time of year!  That way when something comes up and you are away from home, just getting back at dinner time you have meal plans already to go and don’t have to do the standing in front of the fridge ‘what do we want to eat’ game.  *I hate that game.*  :-)

Coming up on this holiday weekend we are going to be spending some time with family, so my plan reflects that.

What to do with leftover ham

Buried in ham leftover from Easter?  The this is the post for you!  Did you know that cooked ham freezes great?  Well it does!  My favorite thing to do is after dinner is complete chop up the left over ham and bag it in 2 cup portions to freeze for meals later on.  I am NOT a fan of leftovers and get really sick of eating the same thing every night, so freezing this ham for later helps kill this boredom thing for me.

Here are some ideas of what to do with that leftover ham:

Welcome to the Monday after Easter!  Hope everyone had a great day celebrating with your loved ones!  We found out that our 4 yr old loves hard boiled eggs!  Who knew??!!  So onto our menu for the week!

Crockpot Beef Casserole

Sausage Lentil Soup (using more leftover ham) with bread

Happy Easter 2011!

Very Happy Easter to all of you out there!  Hope everyone has a very blessed holiday surrounded by those that they love.  We are having a small Easter here at our house this year.  We don’t live close to family and we were not able to travel to be with them this year, so it is just us :-)   Here is what I am making for our Easter fare today:

5 Simple Ways to be More ‘Green’ with your family this St. Patricks Day!

Happy St. Patrick’s Day everyone!  We are dressed in green, watching the NYC Parade on television and cooking Irish Stew in the crockpot!

While dressing the kids in their green outfits this morning it made me think of how much the word ‘Green‘ has become such a buzz word in our society and thus the beginnings of this post :-)

Changing small things that you do in your regular daily life with your family can not only make your carbon footprint a little smaller it can also save you tons of money in the long run!!

Here are my 5 Simple ways to be more Green with your family on St. Patrick’s Day:

1.  Recycle.  I know this sounds like a no brainer, but how many times do you just toss out that can or box because there is not a recycling bin close to you.  If they don’t have recycle receptacles at work then make an effort to bring your cans & bottles home with you.  If you are a real go getter you could even set up a recycling station at your office for you to take home and recycle!  And don’t forget to teach your kids about recycling!  Reusing their yogurt containers for instance is a great way to get kids involved and for them to learn an important lesson!  Check out this awesome post over at Fingerpaint & Superheros about reusing these containers in your everyday life!

2. Hang Clothes to Dry.  Yet another simple one.  This is the first day this year I have been able to hang my clothes outside on the line to dry (YEA!!) and during the winter we have wooden clothes bars that I use inside to dry clothes.  This is one of those things that is greener obviously by not using your clothes dryer as much and helps save you green in your pocket!  Your gas/electric bill will be smaller from not powering up that clothes dryer and it will save wear and tear on your clothing!  Now there are things that I always dry such as undies, socks and towels.  But other than that hanging clothes out is the way to go!  And what smells & feels better than fresh sheets that have been dried out on the line??

3.  Cloth Diaper.  Ok, I know this is the “Simple Ways to be Green” and I am sure some of you are thinking “there is no way cloth diapering is simple”  But I am telling you it is!!!!  Cloth diapers today are not like the cloth diapers of the past at all.  There are no pins (unless you want them) and there are a ton of different options from pocket style to all in ones (the most like a disposable style diaper) to choose from!  The best part in my opinion is that I never have to worry about running out of diapers and needing to make a trip to the store to buy more!  Look for a post next week about how I do my cloth diapering and how it has saved us so much time and money!

4. Gardening.  This is a great way to involve your children in being green!  Let’s face it, kids love to dig in the dirt, so let’s be productive while they are doing it!  Even if you don’t have the space outside to put into a garden you can always do a small container garden or some herbs on the windowsill or even one of those upside down hanging tomato plants hanging on your porch!  There is something to be said about growing some of your own food and of course it will taste amazing with how fresh it is!  Another great way to get fresh produce if you can’t grow it yourself is to look for a local farmers market.  Support your local farmers and get some great food at the same time!!

5.  Composting.  Hand in hand with gardening comes composting.  What better way to reduce your trash then to find a way to reuse it?  There are many different ways to compost and I would suggest researching and finding the best way for you and your situation.  One of the easiest is to keep a small bucket in your kitchen to dump your scraps in then bring it out to a pile in your yard.  Great ways to get children involved is for them to help you place scraps in the bucket, carry it out to the pile with or for you and help you turn the pile.  Then of course using the compost on your garden.

Happy Valentine’s Day everyone!! Hope everyone is getting (and giving) lots of lovin’ today! We like to make Valentine’s Day a family day, so we are making heart cards and a special dessert (my 4 yr old son has not decided what exactly we are making together yet) for the day!
