What to do with leftover ham

Buried in ham leftover from Easter?  The this is the post for you!  Did you know that cooked ham freezes great?  Well it does!  My favorite thing to do is after dinner is complete chop up the left over ham and bag it in 2 cup portions to freeze for meals later on.  I am NOT a fan of leftovers and get really sick of eating the same thing every night, so freezing this ham for later helps kill this boredom thing for me.

Here are some ideas of what to do with that leftover ham:

Cabbage Soup (great way to be sure to use ALL of the ham)

Baked Omelet

Broccoli and Ham Omelet

Ham and Broccoli Pot Pie

Ham and Pineapple Kabobs (a family favorite!)

Sausage Lentil Soup

Scalloped Potatoes and Ham

Shortcut Chicken Cordon Blue

What do you do with your leftover ham?  Do you have any family favorite recipes that everyone looks forward to after a holiday meal?  Ours is the cabbage soup for sure!
